Ingredients
- 1 onion, diced
- 2 cloves garlic, crushed
- 1 courgette, diced
- 400g tin chopped tomatoes
- 750ml vegetable stock
- 1 tsp dried oregano
- 1 tsp dried basil
- 4 dried lasagne sheets, broken into pieces
- 100g cream cheese
- 50g grated Cheddar
- Salt and pepper
Method
- Place onion, garlic, courgette, tomatoes, stock, and herbs in the slow cooker.
- Cook on Low for 4-5 hours.
- Add broken lasagne sheets and cook for 30 more minutes until pasta is tender.
- Stir in cream cheese until melted.
- Serve topped with grated Cheddar.
Tips
Break the lasagne sheets into rough pieces — they don’t need to be even. The cream cheese melts into a gorgeous creamy broth.
