All the flavours of lasagne in soup form — broken pasta sheets, rich tomato broth, and a cheesy finish.

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 courgette, diced
  • 400g tin chopped tomatoes
  • 750ml vegetable stock
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 4 dried lasagne sheets, broken into pieces
  • 100g cream cheese
  • 50g grated Cheddar
  • Salt and pepper

Method

  1. Place onion, garlic, courgette, tomatoes, stock, and herbs in the slow cooker.
  2. Cook on Low for 4-5 hours.
  3. Add broken lasagne sheets and cook for 30 more minutes until pasta is tender.
  4. Stir in cream cheese until melted.
  5. Serve topped with grated Cheddar.

Tips

Break the lasagne sheets into rough pieces — they don’t need to be even. The cream cheese melts into a gorgeous creamy broth.
