Rich, velvety tomato soup from scratch. So much better than tinned and incredibly easy.

Ingredients

  • 2 x 400g tins chopped tomatoes
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 carrot, diced
  • 1 vegetable stock cube dissolved in 500ml water
  • 1 tbsp tomato puree
  • 1 tsp dried basil
  • 1 tsp sugar
  • Salt and pepper
  • Splash of double cream (optional)

Method

  1. Place all ingredients except the cream in the slow cooker.
  2. Cook on Low for 6-8 hours.
  3. Blend until smooth with a stick blender.
  4. Stir in a splash of cream if you like.
  5. Serve with crusty bread and butter.

Tips

The slow cooking concentrates the tomato flavour beautifully. Add a swirl of cream and a few basil leaves for a restaurant touch.
