Rich, velvety tomato soup from scratch. So much better than tinned and incredibly easy.
Ingredients
- 2 x 400g tins chopped tomatoes
- 1 onion, diced
- 2 cloves garlic, crushed
- 1 carrot, diced
- 1 vegetable stock cube dissolved in 500ml water
- 1 tbsp tomato puree
- 1 tsp dried basil
- 1 tsp sugar
- Salt and pepper
- Splash of double cream (optional)
Method
- Place all ingredients except the cream in the slow cooker.
- Cook on Low for 6-8 hours.
- Blend until smooth with a stick blender.
- Stir in a splash of cream if you like.
- Serve with crusty bread and butter.
Tips
The slow cooking concentrates the tomato flavour beautifully. Add a swirl of cream and a few basil leaves for a restaurant touch.
