Ingredients
- 1 cauliflower, broken into florets
- 2 potatoes, cubed
- 1 aubergine, cubed
- 1 onion, diced
- 3 cloves garlic, crushed
- 400ml tin coconut milk
- 400g tin chopped tomatoes
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 200g spinach
- Salt
- Rice, to serve
Method
- Add the cauliflower, potatoes, aubergine, onion, and garlic to the slow cooker.
- Pour in the coconut milk and tomatoes.
- Add all spices and stir.
- Cook on LOW for 6-7 hours.
- Stir in spinach in the last 20 minutes.
- Season and serve with rice.
Tips
Add fresh coriander and a squeeze of lemon just before serving for brightness.
