Mixed Vegetable Curry

Ingredients

  • 1 cauliflower, broken into florets
  • 2 potatoes, cubed
  • 1 aubergine, cubed
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 400ml tin coconut milk
  • 400g tin chopped tomatoes
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 200g spinach
  • Salt
  • Rice, to serve

Method

  1. Add the cauliflower, potatoes, aubergine, onion, and garlic to the slow cooker.
  2. Pour in the coconut milk and tomatoes.
  3. Add all spices and stir.
  4. Cook on LOW for 6-7 hours.
  5. Stir in spinach in the last 20 minutes.
  6. Season and serve with rice.

Tips

Add fresh coriander and a squeeze of lemon just before serving for brightness.
