Ingredients

  • 1 small pumpkin or 500g pumpkin flesh, cubed
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 700ml vegetable stock
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cumin
  • Salt and pepper

Method

  1. Add pumpkin, onion, and garlic to the slow cooker.
  2. Pour in stock and add spices.
  3. Cook on LOW for 6-7 hours.
  4. Blend until smooth. Season and serve.

Tips

Butternut squash works just as well if you can’t find pumpkin.
