Moroccan Lamb Tagine

Ingredients

  • 600g lamb shoulder, cubed
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 400g tin chickpeas, drained
  • 400g tin chopped tomatoes
  • 100g dried apricots
  • 200ml chicken stock
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tbsp honey
  • Salt
  • Couscous, to serve

Method

  1. Brown the lamb. Place in the slow cooker.
  2. Add the onion, garlic, chickpeas, and apricots.
  3. Mix the tomatoes, stock, all spices, and honey. Pour over.
  4. Cook on LOW for 8 hours until the lamb is meltingly tender.
  5. Season to taste. Serve over couscous with fresh coriander.

Tips

Scatter with toasted flaked almonds and pomegranate seeds for a stunning presentation.
