Chicken Adobo

A Filipino classic — chicken braised in soy sauce and vinegar. Savoury, tangy, and utterly addictive.

Ingredients

  • 8 chicken thighs (bone-in)
  • 6 cloves garlic, crushed
  • 100ml soy sauce
  • 100ml white vinegar
  • 200ml chicken stock
  • 3 bay leaves
  • 1 tsp black peppercorns
  • Rice, to serve

Method

  1. Place chicken in the slow cooker.
  2. Mix soy sauce, vinegar, stock, garlic, bay leaves, and peppercorns. Pour over.
  3. Cook LOW 6-7 hours.
  4. Remove chicken and crisp under the grill.
  5. Reduce sauce on the hob until thick.
  6. Serve chicken with sauce over rice.

Tips

The vinegar mellows completely during cooking — don’t worry, it won’t taste sharp.
