Bread and Butter Pudding

A proper British pud — custardy bread with sultanas and a hint of nutmeg. Grandma would approve.

Ingredients

  • 8 slices white bread, buttered
  • 75g sultanas
  • 3 eggs
  • 400ml milk
  • 100ml double cream
  • 75g caster sugar
  • 1 tsp vanilla extract
  • ½ tsp nutmeg
  • Demerara sugar, for topping

Method

  1. Cut the buttered bread into triangles.
  2. Layer the bread in a greased slow cooker, scattering sultanas between layers.
  3. Whisk the eggs, milk, cream, sugar, vanilla, and nutmeg together.
  4. Pour the custard over the bread. Press down gently so the bread soaks it up.
  5. Sprinkle demerara sugar over the top.
  6. Cook on LOW for 2-3 hours until the custard is set but still has a slight wobble.
  7. Serve warm with cream or custard.

Tips

Use slightly stale bread — it soaks up the custard better. Brioche works amazingly if you want something extra indulgent.
