Ingredients
- 600g stewing beef, cubed
- 1 onion, diced
- 3 cloves garlic, crushed
- 2cm fresh ginger, grated (or 1 tsp ginger paste)
- 400g tin chopped tomatoes
- 200ml beef stock
- 2 tbsp curry powder
- 1 tsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- ½ tsp chilli powder
- 1 tbsp tomato puree
- Salt and pepper
- Fresh coriander and rice, to serve
Method
- Brown the beef in a hot pan. No need to cook it through — just get colour on the outside.
- Add the onion, garlic, and ginger to the slow cooker.
- Place the browned beef on top.
- Mix the chopped tomatoes, stock, curry powder, garam masala, turmeric, cumin, chilli powder, and tomato puree together. Pour over the beef.
- Cook on LOW for 8 hours or HIGH for 5 hours until the beef is fork-tender.
- Stir, taste, and adjust seasoning. Scatter with fresh coriander and serve with basmati rice.
Tips
For a creamier curry, stir in 100ml coconut milk in the last 30 minutes.
