Slow Cooker Beef Curry

A fragrant, warming beef curry that fills the house with incredible aromas. Beautifully tender meat in a rich spiced sauce.

Ingredients

  • 600g stewing beef, cubed
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 2cm fresh ginger, grated (or 1 tsp ginger paste)
  • 400g tin chopped tomatoes
  • 200ml beef stock
  • 2 tbsp curry powder
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • ½ tsp chilli powder
  • 1 tbsp tomato puree
  • Salt and pepper
  • Fresh coriander and rice, to serve

Method

  1. Brown the beef in a hot pan. No need to cook it through — just get colour on the outside.
  2. Add the onion, garlic, and ginger to the slow cooker.
  3. Place the browned beef on top.
  4. Mix the chopped tomatoes, stock, curry powder, garam masala, turmeric, cumin, chilli powder, and tomato puree together. Pour over the beef.
  5. Cook on LOW for 8 hours or HIGH for 5 hours until the beef is fork-tender.
  6. Stir, taste, and adjust seasoning. Scatter with fresh coriander and serve with basmati rice.

Tips

For a creamier curry, stir in 100ml coconut milk in the last 30 minutes.
