A quick-prep minced lamb curry with peas. A midweek staple that the whole family will enjoy.

Ingredients

  • 500g lamb mince
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 400g tin chopped tomatoes
  • 150g frozen peas
  • 2 tbsp curry paste (medium)
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp garam masala
  • Fresh coriander to serve

Method

  1. Brown the lamb mince and drain off excess fat.
  2. Place in the slow cooker with onion, garlic, tomatoes, curry paste, and spices.
  3. Cook on Low for 4-5 hours.
  4. Stir in frozen peas for the last 20 minutes.
  5. Scatter with coriander and serve with rice or naan.

Tips

Keema is a great way to stretch lamb mince — the peas add bulk and sweetness.
