Ingredients
- 6 chicken thighs (boneless, skinless)
- 1 onion, sliced
- 250g mushrooms, sliced
- 2 cloves garlic, crushed
- 150ml double cream
- 1 chicken stock cube dissolved in 200ml water
- 1 tbsp Dijon mustard
- 1 tsp dried tarragon
- 1 tbsp cornflour mixed with 2 tbsp cold water
- Salt and pepper
Method
- Place the chicken thighs in the slow cooker.
- Add the onion, mushrooms, and garlic.
- Mix the stock, mustard, and tarragon. Pour over the chicken.
- Cook on Low for 6-8 hours.
- Stir in the cream and the cornflour mixture. Cook for a further 15-20 minutes until thickened.
- Serve with mashed potatoes or rice.
Tips
Tarragon and chicken is a classic French combination. If you can’t find tarragon, thyme works well too.
