A magical self-saucing chocolate pudding. Sponge on top, gooey fudge sauce underneath. No oven required.

Ingredients

  • 150g self-raising flour
  • 50g cocoa powder
  • 150g caster sugar
  • 100ml milk
  • 50g melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • For the sauce:
  • 100g soft brown sugar
  • 3 tbsp cocoa powder
  • 300ml boiling water

Method

  1. Mix the flour, 50g cocoa, and caster sugar in a bowl.
  2. Add the milk, melted butter, egg, and vanilla. Stir until smooth.
  3. Pour into a greased slow cooker.
  4. Sprinkle the brown sugar and remaining cocoa over the top.
  5. Pour the boiling water over the back of a spoon evenly across the top. Do NOT stir.
  6. Cook on High for 2-3 hours until the sponge is set on top.
  7. Serve scooped from the pot with cream or ice cream.

Tips

Trust the process — it looks like a disaster when you pour the water on top, but it magically separates into sponge and sauce.
