Ingredients
- 6 boneless chicken thighs, diced
- 1 large onion, sliced
- 1 red pepper, sliced
- 1 green pepper, sliced
- 3 cloves garlic, crushed
- 400g tin chopped tomatoes
- 2 tbsp jalfrezi paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 green chilli, sliced (optional)
- Fresh coriander to serve
Method
- Place the chicken, onion, peppers, and garlic in the slow cooker.
- Add the tinned tomatoes, jalfrezi paste, cumin, ground coriander, and garam masala. Stir well.
- Cook on Low for 5-6 hours or High for 3 hours.
- Stir in the garam masala and green chilli if using.
- Serve with basmati rice and a scattering of fresh coriander.
Tips
Jalfrezi should have a bit of bite. Adjust the chilli to your taste, but don’t be shy with the spice.
