Italian hunter-style chicken in a rich tomato sauce with peppers, olives, and herbs.

Ingredients

  • 6 chicken thighs (bone-in, skin on)
  • 1 onion, sliced
  • 3 cloves garlic, crushed
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 150g mushrooms, sliced
  • 400g tin chopped tomatoes
  • 100ml red wine (or chicken stock)
  • 2 tbsp tomato puree
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Handful of black olives
  • Salt and pepper

Method

  1. If possible, brown the chicken thighs skin-side down in a hot pan.
  2. Place the onion, garlic, peppers, and mushrooms in the slow cooker.
  3. Sit the chicken on top.
  4. Mix the tomatoes, wine, tomato puree, and herbs. Pour over the chicken.
  5. Cook on Low for 6-8 hours.
  6. Add the olives in the last 30 minutes.
  7. Serve with pasta or crusty bread.

Tips

The bone-in thighs stay incredibly juicy. Browning the skin first adds great flavour.
